When it comes to apples, we’ll take them any way we can get them. But one of my favorites? Fresh apple cake. With walnuts and cinnamon to be exact.

This apple walnut snack cake gets rave reviews from those who have tried it. It’s quick, easy, and has the ultimate, moist texture. This is one of those classic, no-fail recipes that are perfect for potlucks, fall parties, or just for when that sweet craving hits in the afternoon.

About this Apple Walnut Snack Cake:

  • Flavor: If you remember eating apple cake growing up, this cake should hit that memory on the nose. It’s tender, full of warm cinnamon spice, apples and walnut flavor. It’s sweet, but not overly so since there is no icing.
  • Texture: Since this cake has apples and walnuts, it is not a smooth textured cake. However if you dice the apples finely and chop the walnuts finely, that will help the cake not have a chunky texture.
  • Method: This cake bakes in the oven in a standard 9×13″ baking pan.

What apples are best for apple cake?

We like to use Granny Smith apples in this easy snack cake recipe. Granny Smith apples are slightly tart, so they pair well with the sweet cake.

If you don’t have Granny Smith, try Pink Lady, Gala or Honeycrisp apples.

Do you have to peel apples before baking with them?

I say yes. Although technically you don’t have to peel the apples, I recommend peeling them so that you don’t end up with any weird textures in your cake. With an Apple Pie Peeler/Corer, it takes no time at all.

How to Make Apple Walnut Cake

  • Preheat the oven to 350ºF. Spray a 9×13 baking pan with cooking spray.
  • In a medium-size bowl, blend together the eggs, sugar, oil and vanilla.
  • In a separate bowl, sift together the flour, baking soda, cinnamon and salt.
  • Add the flour mixture to the egg mixture mix just until blended.
  • Fold in the apples and nuts.

  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 40-45 minutes.

And because the flavor is so amazing, you won’t even need frosting. A simple dusting of powdered sugar makes the snack cake look pretty and gives it an extra touch of sweetness.

Storage Instructions

Store in an airtight container at room temperature for up to 2 days. Then store in the fridge or freezer.

This cake freezes well because the apples help keep it moist. For longer term freezer storage, wrap in plastic wrap, then place in a second container and freeze for up to 6 weeks. Allow the cake to thaw completely before unwrapping it. This will preserve its freshness.

I made the cake according to directions. It took a lot longer than 38 minutes to bake.

My cake was in for 60 minutes…..and yeas my oven is calibrated correctly
