When I met my husband he mentioned a lady at work made a tomato soup cake to share with the workers. Since I had a recipe from my mother and grandmother, I made him a cake for our next date. I frosted it with chocolate frosting. My family always served it this way. He was impressed. He proposed to me that week. Been 20 years since we married. I make this cake, now, to celebrate our anniversary. My recipe calls for adding the baking soda to the tomato soup before adding to the batter. Since you got such good ratings, I’m thinking I should try making it following your recipe.

My Nana made it too. I lived with her from ages 9 to 11. She introduced me to so many different dishes. I loved the tomato soup cake.
The first odd sounding dish she introduced me to was mouse soup. Darn if the meatballs didn’t look like a mouse’s round belly. After I graduated high school it was actually her version of Italian wedding soup. Those are the two dishes I remember most. I can still taste the cake today. She also grew up during te depression, but on an reservation.

Tomato Soup Cake needs no frosting. Mother never put frosting on hers, there were never any left overs. The whole family loved it.

Bake mine in two round cake tins … then layer it with some cream cheese frosting between the layers as well as on top & sides. A spoonful of lemon juice and some lemon zest added to the frosting mixture takes it up a notch as well. My Nana used to make this cake back in the 1940s… so this recipe has pleased several generations of cake lovers.

I don’t usually rate recipes, but this one deserves it! Tomato soup!! What a lovely, light, and sweet cake it makes! I made 16 medium muffins for our Grandson again, and he just loves them…the only spice I add is cinnamon, a heaping tbsp because he loves it so much…I don’t frost them, they’re a great snack just as they are for us! Thank you for bringing back this traditional recipe!!
