peeled, cored and chopped Granny Smith apples

vanilla

Instructions
Preheat the oven to 350 degrees.
In a large bowl, mix together the eggs, sugar and oil. Mix well.
Add the flour, salt and baking soda. Mix just until barely blended. Do not overmix.
Fold in the vanilla and chopped apples. The batter will be thick.
Spread in a greased 9x13 baking pan.
Bake at 350 degrees for 45 minutes or until a toothpick inserted in the center comes out clean.
Serve warm with ice cream and caramel topping.
Store leftovers in an airtight container.
