In a saucepan, combine brown sugar and 4 tablespoons of butter (½ stick). Melt the butter and stir to combine.
Pour this mixture into a greased 9” round springform pan (or cake pan with 3” sides).
Arrange bananas over the sugar in concentric circles.
In a small bowl, whisk together the flour, baking powder and cinnamon. Set aside.
In another bowl, cream together the remaining butter and granulated sugar.
Add in the egg yolks and vanilla and beat well.
Add in the flour mixture alternately with the milk, mixing between each addition.
In a small clean bowl, use a hand mixer (or stand mixer) with clean, grease-free beaters to whip the egg whites until they hold stiff peaks.
Fold the egg whites into the batter carefully.
Spoon the cake batter over the banana slices.
Bake at 350º Fahrenheit for 50-60 minutes or until the cake tests done.
Cool for 10 minutes, then turn out onto a plate to cool completely.
Serve with ice cream.
