Banana Upside Down Cake

Cinnamon spice cake with caramelized bananas on top. This banana upside down cake is perfect for breakfast or dessert.

Upside down cakes are a classic dessert that date back to the earlier 1800’s. Almost everyone has a recipe for a pineapple upside down cake. And you can make them with other fruits and even in bundt cake pans too.

But today we’re using bananas. And adding cinnamon for a beautifully spiced cake with caramelized bananas baked into the top. Serve it for breakfast. Eat it for dessert. It’s amazing and you’ll love it!

How to Make Banana Upside Down Cake

There are no special ingredients in this recipe. They are normal pantry ingredients such as white sugar, butter, milk and all-purpose flour. Here’s how to make the cake:

  • Make the syrup & arrange bananas. In a saucepan, combine brown sugar and 4 tablespoons of butter (½ stick). Melt the butter and stir to combine. Pour this mixture into a greased 9” round springform pan (or cake pan with 3” sides). Arrange bananas over the sugar in concentric circles.
  • Whisk dry ingredients. In a small bowl, whisk together the flour, baking powder and cinnamon. Set aside.
  • Cream. In another bowl, cream together the remaining butter and granulated sugar. Add in the egg yolks and vanilla and beat well.
  • Combine. Add in the flour mixture alternately with the milk, mixing between each addition.
  • Beat & fold egg whites. In a small clean bowl, use a hand mixer (or stand mixer) with clean, grease-free beaters to whip the egg whites until they hold stiff peaks. Fold the egg whites into the batter carefully.
  • Bake. Spoon the cake batter over the banana slices. Bake at 350º Fahrenheit for 50-60 minutes or until the cake tests done.

When should you flip an upside down cake?

You’ll want to let the banana cake cool in the pan only about 10 minutes. The syrup shouldn’t get too cool or it will harden and not come out.

Do you have to refrigerate upside down cake?

This cake is best served warm and fresh. If you have any leftovers, store them in an airtight container. The cake will be ok at room temperature for about 2 days. If you have any longer than that, refrigerate the cake.

When you are ready to serve the cake, reheat each slice for 10-15 seconds in the microwave.
