What is Blueberry Buckle?
Blueberry buckle is a cake-like dessert that is similar to coffee cake. Buckles have cake and fruit baked together with a streusel topping. As the cake bakes, the fruit and streusel makes the cake “buckle,” giving this dessert it’s unique name.
How to Make Blueberry Buckle
Make this homemade blueberry buckle following these instructions. It’s pretty simple to make and is so good to eat!
- Preheat the oven to 350º Fahrenheit. Spray an 8×8″ baking pan with cooking spray.
- In a large bowl, cream the butter and sugar together using a hand mixer, scraping the sides of the bowls as needed.
- Add the egg and beat well.
- In a small bowl, whisk together the flour, baking powder, and salt.
- Add the flour mixture alternately with the milk, mixing between each addition.
- Fold in the blueberries.
- Spread the batter in the prepared pan.

Can I Use Frozen Bluberries?
Fresh berries taste best in this recipe, but if you don’t have fresh blueberries because they’re out of season or unavailable, you can use frozen blueberries for this buckle.
Frozen blueberries will still taste great in your cake, but may altar the color of your batter (and finished product) slightly.

I’ve made this buckle 4 times in the last month!!! I and my family love the blueberry sweet-tartness of this “coffee cake,” best served with a cup of strong coffee first thing in the morning. Wow! The streusel topping gets all wrinkly (hence the buckle effect) and complements the moist cake with a delicious dry cinnamon crunch that makes your blueberry buckle irresistible. Honestly, it’s like Oreo cookies for me—I just want one more bite… very dangerous!!!
