Flourless Chocolate Loaf Cake
This delicious, tender, chocolate loaf cake is made with zero gluten/grains or dairy! The base of the recipe is just 5 ingredients. This recipe is SUPER easy and your blender does all the work.
Saturday afternoons. Wednesday evenings. Friday parties. There are often times when I need a chocolate pick me up, but I don’t always want to have all the unhealthy stuff.
The recipe we’re sharing today is gluten free, grain free, dairy free…and could potentially be sugar free if you’d like. It is full of chocolate flavor and made in a blender. What’s not to love?

5 Ingredient Cake:
The base of the recipe is just 5 ingredients.
- Eggs.
- Baking soda.
- Almond butter. If the almond butter is unsalted, I recommend adding ½ teaspoon of salt to the recipe. It’s also important that the nut butter is a bit oily, some are super dry and that won’t work with this recipe. Look for a kind where the oil sits on the top of the jar and make sure to mix well before measuring out for the recipe.
- Cocoa powder. Be sure to use unsweetened cocoa powder.
- Sugar. See notes below about sugar variations.
How to Make Chocolate Loaf Cake
- Prepare. Preheat the oven to 350 degrees Fahrenheit and line a 4×8-inch loaf pan with parchment paper and set aside.
- Blend. Add the eggs, baking soda, almond butter, and cocoa powder to a blender or food processor and blend until smooth and completely mix, scrape down the sides as needed. Batter will be thick.
- Bake. Transfer the batter to the prepared loaf pan and spread out evenly. Top with chocolate chips or flaky salt. Bake for 27 to 30 minutes or until a toothpick comes clean when inserted into the center.
Important Tips:
- The blender/food processor is SUPER important to this recipe to mix everything together properly. A stand mixer or hand mixing just won’t cut it.
- Our favorite combo of this bread is dark chocolate chips folded into the batter as well as sprinkled on top and then topped with flaky salt – it’s to die for!
- The bread pretty much holds the shape of the batter once it’s in the oven, so spreading it out to the edges of the pan is highly recommended.
- This bread is also really delicious when pan-seared with butter and topped with ice cream.
Healthy Chocolate Loaf Cake
Here are a few things you can do to adapt this to your diet.
- Use a sugar replacement. Stevia and erythritol have a much sweeter flavor than granulated sugar so less is needed in the recipe if that is what’s used.
- Or use no sugar at all. Sugar can be completely omitted if this needs to be made sugar free.
- Add in dairy free chocolate chips. Recipe is dairy-free, but a reader would want to make sure to use dairy-free chocolate chips if they chose to include them.

- 1 teaspoon baking soda
- 1 cup creamy almond butter
- ½ cup unsweetened cocoa powder
- ½ cup granulated sugar OR ¼ cup powdered stevia or erythritol for keto-friendly
- dark chocolate chips or chopped chocolate optional
- flaky salt optional
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a 4×8-inch loaf pan with parchment paper and set aside.
- Add the eggs, baking soda, almond butter, and cocoa powder to a blender or food processor and blend until smooth and completely mix, scrape down the sides as needed. Batter will be thick.
- Transfer the batter to the prepared loaf pan and spread out evenly.
- Top with chocolate chips if desired, or ½ cup of chocolate chips can be folded into the batter. Can also top with flaky salt before baking if desired.
- Bake for 27 to 30 minutes or until a toothpick comes clean when inserted into the center.
