Keto Vanilla Buttercream
Your low carb answer to all of our sweet cravings! This versatile keto vanilla buttercream frosting is perfect for cakes, cookies and cupcakes.
Are you ready for our newest keto vanilla buttercream {no cream cheese this time!}? This recipe is silky smooth thanks to powdered monk fruit sweetener.
It’s thick enough to pipe swirls and can be flavored with vanilla or whatever your favorite flavor extract is.
What kind of sugar to use for low carb frosting?
For the Low carb Sweeter, I used Lakanto Monkfruit Sweetener, which is a cup-for-cup alternative to regular powdered sugar. There are other Low Carb Sweetener available (like Confectioners Swerve) that are extremely suited to make frosting.
Make sure the sweetener you use is an exact 1:1 sugar replacement, or else the sweetness will be off balanced. If you have only a granulated sugar, run it in the food processor to get a powdered texture. Using plain granulated sweetener won’t work for this frosting will make the frosting gritty.
How to Make Keto Vanilla Frosting
Buttercream frosting, low carb or full sugar, always work best if you use a high powered mixer. Either a stand mixer or hand mixer will work, but your arm may still get tired even with a hand mixer. A stand mixer is ideal and will get your frosting silky smooth.
- In a large bowl add the room temperature butter. Beat with an electric mixer on high for 5 minutes till fluffy and white in color.
- Add the powdered sweetener of choice and beat it on the lowest setting for a minute, or until the sweetener is completely mixed in with the whipped butter.
- Increase the speed to high and beat for 2 to 3 minutes or till light and fluffy.
- Add the vanilla extract and heavy cream and beat again for 1 minute.
The frosting is then ready to frost a cake. Or you can refrigerate it and save it for later.
How much frosting does this make?
This recipe makes almost 3 cups of frosting. The amount of frosting was enough to fill and frost a 6-inch 3-layer cake. It will also cover an 8 or 9 inch 2 layer cake completely.
Can I use regular milk instead of heavy cream?
Do not substitute regular milk for heavy cream. Milk has sugar and it is not a Keto friendly ingredient. Substitute almond milk or full fat coconut milk.
Can you freeze this frosting?
This frosting can also be frozen for up to 6 months. To use, thaw in the refrigerator overnight, and beat with an electric mixer for couple of minute, till light and fluffy.
