I can’t resist a good sale. So when box cake mixes go on sale for insanely low prices or I find them on clearance, I snatch them up. Cake mixes are so versatile and are a great starting point for so many desserts!
I had a butter pecan cake mix in my cupboard and also a bag of toffee. I knew that Butter Pecan Cake Mix cookies with buttery toffee had to happen!

How to Make Cookies From Cake Mix:
Cake mix cookies are one of the easiest cookies to make. You don’t have to refrigerate the dough or do anything fancy. Just mix and bake!
- In a large bowl, whisk eggs and oil until blended.
- Add cake mix and mix well until completely combined.
- Fold in pecans and toffee bits.
- Drop by tablespoonfuls onto silpat baking sheets, leaving about 2 inches between each cookie.
You’ll bake the cookies in a 350º Fahrenheit oven for about 11-12 minutes. If you want the cookies to stay soft, don’t let them get brown.

Ingredients
- 2 large eggs (room temperature)
- 1/2 cup canola oil
- 1 box butter pecan cake mix (15.25 ounces)
- 1 cup chopped pecans
- 1 cup milk chocolate English toffee bits
Instructions
- Preheat oven to 350° Fahrenheit.
- In a large bowl, whisk eggs and oil until blended.
- Add cake mix and mix well until completely combined.
- Fold in pecans and toffee bits.
- Drop by tablespoonfuls onto silpat baking sheets, leaving about 2 inches between each cookie.
- Bake for 11-12 minutes. We remove our cookies before they get brown.
- Allow the cookies to cool on the baking sheet for 1 minute before moving to a wire rack to cool completely.
- Store in an airtight container and store at room temperature.
