I can’t resist a good sale. So when box cake mixes go on sale for insanely low prices or I find them on clearance, I snatch them up. Cake mixes are so versatile and are a great starting point for so many desserts!

I had a butter pecan cake mix in my cupboard and also a bag of toffee. I knew that Butter Pecan Cake Mix cookies with buttery toffee had to happen!

How to Make Cookies From Cake Mix:

Cake mix cookies are one of the easiest cookies to make. You don’t have to refrigerate the dough or do anything fancy. Just mix and bake!

  • In a large bowl, whisk eggs and oil until blended.
  • Add cake mix and mix well until completely combined.
  • Fold in pecans and toffee bits.
  • Drop by tablespoonfuls onto silpat baking sheets, leaving about 2 inches between each cookie.

You’ll bake the cookies in a 350º Fahrenheit oven for about 11-12 minutes. If you want the cookies to stay soft, don’t let them get brown.

  • Use any flavor cake mix you’d like.
  • Add chocolate chips or butterscotch chips.
  • Melt chocolate chips and drizzle on top of the cookies.
  • Take two cookies and put ice cream between them for an ice cream sandwich.

Ingredients
 

  • 2 large eggs (room temperature)
  • 1/2 cup canola oil
  • 1 box butter pecan cake mix (15.25 ounces)
  • 1 cup chopped pecans
  • 1 cup milk chocolate English toffee bits

Instructions
 

  • Preheat oven to 350° Fahrenheit.
  • In a large bowl, whisk eggs and oil until blended.
  • Add cake mix and mix well until completely combined.
  • Fold in pecans and toffee bits.
  • Drop by tablespoonfuls onto silpat baking sheets, leaving about 2 inches between each cookie.
  • Bake for 11-12 minutes. We remove our cookies before they get brown.
  • Allow the cookies to cool on the baking sheet for 1 minute before moving to a wire rack to cool completely.
  • Store in an airtight container and store at room temperature.

I have made these cookies three times and they disappear very quickly, that’s because they are very delicious. I dipped them in chocolate and also drizzled the tops with chocolate that totally took them over the top. So yummy.
