Can you make brownies with a cake mix?
Yes, you can make brownies with a cake mix! This is a popular baking hack to quickly and easily make moist, delicious brownies with minimal ingredients.
There are variations that call for cream cheese or vegetable oil, but ours simply has butter and eggs for a fabulous chewy texture.
Ingredients
- Strawberry Cake Mix. I used Pillsbury Moist Supreme Strawberry Cake Mix (15.25 ounces).
- Strawberry Jam: I used store-brand strawberry jam. I prefer jam or preserves because I like the little pieces of strawberries in the glaze.
How to Make Strawberry Brownies
- Prepare. Preheat the oven to 350°F. Grease a 9×9 square baking dish with cooking spray and line it with two small pieces of parchment paper. Set aside.
- Mix the batter. Use a wooden spoon or spatula to mix strawberry cake mix (no stand mixer or hand mixer needed!), melted butter, and eggs in a medium bowl. The strawberry brownie batter will be thick, almost like a thick cookie dough.
- Bake. Press the batter evenly into the baking pan, then bake for 18-20 minutes or until a toothpick inserted in the middle of the brownies comes out clean. Let the brownies cool.
- Make the glaze. Once the brownies are cool, combine the powdered sugar, milk, strawberry preserves, and salt in a small mixing bowl until the glaze is smooth and there are no powdered sugar lumps.
- Pour the glaze over the brownies and let them rest until the glaze sets, about 15 minutes.
Baking Tips for Strawberry Cake Mix Brownies
- The batter will be quite thick. You made need to use your hands to finish mixing the ingredients and use your fingers to press them into the baking pan.
- To get the glaze to drip down the sides of the brownies, slice the brownies first, put them back together, then pour the glaze over the brownies. Before the glaze is completely set, carefully pull the brownies apart to get the glaze to drip down the sides.
- Make sure the glaze is well-mixed so you don’t have a lot of lumps of powdered sugar. Sifting the powdered sugar before mixing can help with this.
Substitutions
- You can use salted butter instead of unsalted butter. The cake may have a slightly saltier flavor.
- Try using lemon juice instead of milk for the glaze for a lemon and strawberry combo.
- If you don’t want strawberry pieces in the glaze, use strawberry jelly or jam.
- Add white chocolate chips for more texture and flavor.
- Add a touch of vanilla extract or strawberry extract for a pop of flavor.
Storage Instructions
- Room Temperature: Place the brownies in an airtight container and store them on the counter for up to 3 days.
- Refrigerator: Place the brownies in an airtight container and store them in the fridge for up to 5 days. Enjoy chilled or bring to room temperature.
- Freezer: Place the brownies in an airtight container and store them in the freezer for up to 3 months. Thaw overnight on the counter or in the fridge before serving. For best results, freeze the brownies before adding the glaze. The glaze is best when it is made fresh.
