Easy Strawberry Upside Down Cake with fresh fruit on a plate

Whether you use fresh or frozen berries, you won’t be able to get enough of the flavor that is added to this cake thanks to fruit. Fruit is actually an excellent ingredient to bake with. It adds so much flavor to any cake and recipe. If there is a cake that can be baked with fruit, I’m on it.

What’s an Upside Down Cake?

If you’re reading this and still unsure of what an upside down cake is, let me explain. Essentially, an upside down cake is baked over a layer of fruit. So, typically the fruit will be on the bottom of the pan. You’ll flip the pan over when you’re done and the cake will be “upside down” but still very delicious. With all the cakes made in the world, making an Easy Strawberry Upside Down Cake just sounds easy and fun, doesn’t it?

Which is Better: Fresh or Frozen Strawberries?

We prefer fresh strawberries. But if you’re on a budget, then frozen strawberries work great. In the summer months, I like to go strawberry picking and purchase as many as I can for a small amount of cash. I can flash freeze these strawberries and use them in this easy cake recipe.

I mean, let’s be honest, I make a lot of cakes with fruit. Also, keep in mind that you could *almost* apply making this recipe to any fruit. Pineapple, cherry, or blueberries, would make for an excellent upside down cake.

Perfect Potluck Cake

I have found that during the summer months, there are a lot of potlucks and parties to attend. You will need something to bring to those parties.

Let’s be honest, money can be a little tight in the summers because of all the fun going around. You need inexpensive dessert ideas!

How to Store Cake with Fruit

Put the strawberry cake into an airtight container. You should store it in the fridge, since it has fresh fruit. I prefer my upside down cake to be cold, but you may like yours warm.

If you do like it warm, pop it in the microwave for 10-15 seconds. This cake should last you a few days store, although it will probably be consumed very quickly.
