Apple Oatmeal Snack Cake
This apple oatmeal snack cake makes a great breakfast or afternoon snack. It’s an easy cake recipe packed full of oatmeal, apples and nuts.

I think you’ll find this snack cake easy to love! This apple oatmeal snack cake isn’t your traditional fluffy layered cake. It’s thick, hearty and almost cookie-like. That makes it a perfect treat for after school. It will hold you over til dinner!
What apples are best for baking?
Granny Smith, Jonagold and Honeycrisp are our favorite apples for baking. Pink Lady are also a great choice since they will hold their shape well.
What is the easiest way to peel apples?
We use an apple peeler/slicer/corer kitchen gadget that quickly peels, cores and slices apples. It’s amazing and I don’t know how we’d survive fall baking without it. You can find the one we have here.
How to Make Apple Oatmeal Snack Cake
- Preheat the oven to 350F.
- Line an 11×7 inch baking pan with parchment paper and set aside.
- In a large bowl cream the butter and brown sugar until light and fluffy.
- Add the eggs and vanilla and beat well.
- Add the flour, rolled oats, baking powder, cinnamon and salt to the creamed mixture and beat to combine. The batter will be quite thick.
- Stir in the apples.
- Spread batter evenly in the prepared pan.
- Bake for 30 to 35 minutes until golden brown and center is almost firm.
- Allow pan to cool completely on a wire rack. Dust top with powdered sugar.
- When cooled, lift the squares out with the parchment paper and cut into 12 equal squares.
How do you know when cake is done?
Each cake is different. If you are making a light, fluffy cake, you can often touch the center and it will spring back when it is done. This cake, however, is a thicker, denser cake.
You’ll want to stick a toothpick in the center of the cake to make sure it comes out clean. You can also test the internal temperature of a cake to make sure it is done. The internal temperature should be 210º Fahrenheit.
How do you store cake with fruit?
This apple cake is safe to store at room temperature 48 hours. If you are going to have it longer than 48 hours, I recommend sealing it in an airtight container and storing it in the refrigerator.
Can you freeze cakes with apples?
Yes! We find that cakes with apples freeze really well. The fruit helps keep the cake moist.
Place the cake in an airtight container. Freeze for up to 2 months. When you are ready to serve the cake, remove it from the freezer. Allow it to defrost completely before opening the container. This will keep the moisture in the cake.
