When the sweet craving hits, there is nothing that is better than a piece of snack cake. This snack cake is extra filling since it is stuffed full of apples and walnuts…and butterscotch!
Butterscotch and apples together??? Yes. The rich buttery flavor of butterscotch pairs so well with tangy sweet apples.

This recipe begins with apples as the center stage. You want to choose the correct apples when baking. You want apples that not only taste good, but also will hold their shape after baked. You don’t want mushy apples!
Granny Smith are a great option for baking and work in almost any baked recipe. You can normally find this type in grocery stores.
You can also use Pink Lady or Honeycrisp.

Do you have to peel apples for cake?
Yes. Always peel apples for baking. The skins will loosen during baking and it could cause a weird texture in your cake if you leave them on.

Apple Cake Recipe with Oil
This cake is super moist. One thing that makes the cake moist is apples. The other is oil. You can use your favorite cooking oil in this recipe. We typically use vegetable oil or canola oil. But coconut oil would be a delicious choice too!
Can you substitute applesauce for oil? We haven’t tried that yet, but I think it would be a great idea in this recipe and would only boost the flavor of the apples
How to Make Butterscotch Apple Cake
- Preheat the oven to 350 degrees.
- In a large bowl, mix together the canola oil, egg and sugar.

- In a separate bowl, sift together the flour, baking soda, salt, cinnamon and baking powder.

- Add the dry ingredients to the wet ingredients and mix just until combined.

- Fold in the chopped apples.

- Spray an 8×8 pan with cooking spray.
- Spread this mixture in the bottom of the prepared pan.
- Sprinkle the walnuts and butterscotch chips on top of the cake batter.

- Bake at 350 degrees for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool and cut them into squares.
- This cake is best baked one day before serving.

This cake is best stored at room temperature for up to 3 days. Be sure the cake is sealed in an airtight container.
Can you freeze apple cake?
Yes! This butterscotch apple cake will freeze well. Double wrap any leftover cake pieces. We usually place leftover cake in a zippered plastic bag, then put that bag into a storage container with a snap tight lid. Freeze for up to 2 months.
When you want to defrost the cake, allow it to fully defrost before opening the freezer container. This will help keep the moisture in the cake.
