How to Make Cookies from Cake Mix
We’ve shared how to make cake mix cookies from any box mix, but in this recipe we’re making them a little special with candy and nuts.
You’ll notice that for this recipe we add 1/4 cup flour to this recipe and used a 15.25 ounce cake mix. If you find a cake mix that is 18 ounces instead, leave the extra flour out.
- In a medium bowl stir the cake mix and the flour to combine.
- Add eggs and vegetable oil. Blend well using an electric mixer. Dough will be quite thick and stiff; therefore, hand mixing is not recommended.
- Using a small scooper (or one measured tablespoon in volume) form 24 equal sized dough balls. I like to roll them smooth with my hands for prettier results.
- Bake for 8 min and remove from oven. Don’t over bake or the cookies may be dry.
- Press a chocolate covered candy into the center of each cookie.
- Return pan of cookies to the oven for 60 seconds.
- Remove pan from oven and place each pecan half on top of the warmed chocolate and press to flatten.
Allow the cookies to cool for 1 minute before moving them to a wire rack to cool completely. If you move them too soon they will break apart.
How to Decorate These Cookies for a Holiday
To “dress them up” simply melt candy melts in your desired color and drizzle on the cookie with either a fork or spoon. Then sprinkle with nonpareils. You could even just dip one side in candy melts for a pretty look.
Can you freeze cake mix cookies?
Yes! These cookies freeze well for up to one month in an airtight container.
