Easy Banana Bundt Cake

Isn’t this Easy Banana Bundt Cake a beauty? You’d never know when taking a peek at it that it starts with a cake mix.

What do bananas do for cake?

Besides give cake amazing flavor, bananas make a cake extra moist. Sometimes you can use a banana to replace oil or eggs in cake. But for this recipe, we leave all of those ingredients in and still put in the bananas. Which means this Easy Banana Bundt Cake is SUPER moist!

How to Make Easy Banana Bundt Cake

Choose whatever brand cake mix you like best. Any of the major brands (or store brands) will work. (If you happen to only have a white cake mix, that will work too.)

  • In a large bowl, prepare the yellow cake mix according to the directions on the box. Set aside.

  • For this recipe you’ll use 2 ripe bananas. Bananas should not be totally black, but should have a nice amount of black spots on them. This means the bananas are sweet and will easily mix into the batter.
  • In a small bowl, mash the bananas and baking soda up until it’s nice and creamy. You can add a teaspoon of cinnamon to the banana mixture if you’d like to.

  • Add the banana mixture to the cake mix mixture and blend until well combined.

  • Pour the batter into a greased 10-12 cup bundt cake pan.

  • Bake for 40-50 minutes.
  • Test the cake with a toothpick or touch the top of the cake to test for the doneness. The toothpick will come out clean and the cake will bounce back when you touch it.

How to Easily Remove Bundt Cake From the Pan

There are several different ways to ensure your bundt cake comes out of the pan. Here are a few options:

  • Use a non-stick pan.
  • Use Baker’s Joy. It’s a spray that helps cakes release easily from the pan. You can get it here.
  • Use Cake Release. It’s a homemade mix that works beautifully. We make up a big batch of this and keep it in the fridge for all of our cake baking.
  • The last option for greasing the pan is to grease with shortening, then dust the pan with flour. For best results use shortening instead of butter…and don’t forget the flour!
  • After the cake bakes, only let the cake cool in the pan for 5-10 minutes. If the cake cools too much, the sugar may stick to the pan making the cake difficult to come out.

Remember that these are just general rules. Always follow the advice of the recipe you are using.

Cream Cheese Glaze

Once the Easy Banana Bundt Cake is cooled you can whip up the cream cheese glaze. The butter and cream cheese should be at room temperature for the best textured glaze.

  • Cream together the cream cheese and butter until well combined.
  • Add in the vanilla extract. If you want to use a different flavor such as butter or rum extract, you can.
  • Add in the powdered sugar mixing well with each addition. Slowly add in the milk and mix until a nice drizzle has been reached and all of the lumps are gone.
  • Pour the glaze over your cooled cake.

**Pro Tip: If you pour the glaze over the warm cake, it will spread everywhere and not stay on the cake. Be sure the cake is cooled for the prettiest look.**

Does banana cake need to be refrigerated?

Banana cake is ok to store at room temperature. Keep it in an airtight container.

Can you freeze banana cake?

Yes! Banana cakes and breads freeze really well. Make sure that the cake is completely cooled before packaging it in an airtight container.

This cake will freeze well for up to 6 weeks. When you are ready to defrost the cake, allow the cake to come to room temperature before opening the container. This will ensure the cake stays fresh.

How long can you keep a cake after baking?

Cakes are usually best if eaten within 2-3 days of baking it. You can freeze the cake if you need to keep it longer than 2-3 days.

Make the cake:

  • Preheat oven to 350 degrees Fahrenheit. Grease a bundt cake pan with shortening, then dust with flour.
  • In a large bowl, prepare the yellow cake mix according to the directions on the box. Set aside.
  • In a small bowl, mash the bananas, cinnamon (which is optional) and baking soda up until it’s nice and creamy. Add the banana mixture to the cake mix mixture and blend until well combined.
  • Pour the batter into your prepared pan and bake for 40-50 minutes, test with a toothpick for doneness.
  • Allow the cake to cool for 10 minutes on the plate, then turn it out onto a plate to cool completely.

Make the glaze:

  • Cream together the cream cheese and butter until well combined.
  • Add in the vanilla extract and slowly add in the powdered sugar mixing well with each addition. Slowly add in the milk and mix until a nice drizzle has been reached and all of the lumps are gone.
  • Pour the glaze over your cooled cake.
  • Top with crushed walnuts.
  • Store in an airtight container.

Great recipe. In my cake mix, I replaced oil with a cube of melted butter, replaced the water with milk & used 4 eggs instead of 3. Added some chopped pecans & it was delicious.

The recipe calls for 1 tsp. of cinnamon but the instructions don’t seem to use it?

Banana cake is SUPER.

Could you please tell me what size cake mix you used? I use gluten free ones that are 15.25 oz. Also how much banana cup wise is 2 bananas? They very greatly in size. Yhank you!
