When the cake craving hits, quick and easy is what you need. Most 4 ingredient cake recipes start with a cake mix…it might be an angel food cake mix, spice cake mix, or cinnamon swirl cake. There are so many variations!

Can you make a cake without oil?

Yes! Although an oil free (or butter free cake) will have a different texture than traditional cakes, they can still be moist and delicious. Many times cakes use applesauce in place of oil. This recipe uses a can of fruit cocktail. Don’t drain and discard the juice. You’ll use all of that juice and fruit to make this easy cake recipe.

How To Make Cake

  • Preheat the oven to 350º Fahrenheit. Grease and flour a 9×13 baking pan (or spray with cooking spray).
  • In the bowl of a stand mixer, beat together the cake mix, fruit cocktail (with juice) and eggs. Beat for 2 minutes. The fruit will get blended into the cake batter so you can have delicious fruit flavor in every bite.
  • Add in the coconut and mix until combined.
  • Pour the batter into the prepared pan.
  • Bake for 30-35 minutes or until the cake tests done.
  • Serve with a dollop of whipped cream.

Toppings for Fruit Cake

We like to top this cake with a dollop of whipped cream and a cherry. You can serve with ice cream or even a raspberry sauce or strawberry sauce.

Should you keep cakes in the fridge?

It really depends on the type of cake and frosting that you have. This cake is ok stored at room temperature.

How long will a cake stay fresh?

Because this cake does not have frosting to seal it, you’ll want to be sure it is covered with plastic wrap as tightly as possible. Air will dry it out so seal it in an airtight container. The cake will stay fresh at room temperature if properly sealed for 2-3 days.

  • 17 ounces fruit cocktail mix with juice (1 can WITH juice)
  • 3 large eggs
  • 1 cup shredded coconut

How many eggs??? You say box cake mix no additional ingredients!
